[Breaking] Rename callback setters to setCallbacks, taking a reference - #1142
Callback registration now requires callback objects rather than nullable pointers. Registered objects must remain alive while in use; callback ownership and deletion options have been removed.
Added methods to restore default callback handlers.
Updated example sketches to use the revised callback registration APIs for scanning, clients, servers, characteristics, descriptors, and advertising.
It looks like this branch is under active development. To avoid overwhelming you with review comments due to an influx of new commits, CodeRabbit has automatically paused this review. You can configure this behavior by changing the reviews.auto_review.auto_pause_after_reviewed_commits setting.
Arr, callback registration now uses reference-based setters instead of pointer-based APIs. The client, device, scan, server, characteristic, descriptor, and extended advertising APIs add reset methods. Callback dispatch paths and example registrations are updated.
Arr, these callback setters now take lvalue references, and rvalue overloads are deleted. The APIs add reset methods. Client and server callback ownership options are removed, along with the client configuration field.
Arr, stream callback registration takes a reference. The stream server passes its callback wrapper directly and dereferences the stored user callback when restoring it.
Device reinitialization can dereference a destroyed callback object, and migration-guide users can encounter a compile failure until both issues are corrected.

1380-1382: Avast! Another pointer-based callback setter, similar to the scan API!
Arr, setDeviceCallbacks also uses the pointer-based pattern with null-check fallback, same as setScanCallbacks in NimBLEScan.cpp. Meanwhile, NimBLEServer, NimBLECharacteristic, NimBLEDescriptor, and NimBLEExtAdvertising all changed to reference-based APIs.
If this be intentional (perhaps for backwards compatibility or because these are "device-wide" vs "per-object" callbacks), considerin' documentating the rationale would help future maintainers understand the design decision. Otherwise, for API consistency across the library, these could also be converted to reference-based. What say ye, cap'n? Yarrr!

1392-1394: Arrr, clearAll likely wants to clear device callbacks too.
m_pCallbacks is process-global, so it survives deinit(true). That leaves a dangling pointer hazard across re-init if the sketch ties the callback object's lifetime to a single device session and forgets to call resetCallbacks() manually. Folding resetCallbacks() into the clearAll path would make the full reset semantics safer.

src/NimBLEDevice.h (1)
136-137: Spell out the callback lifetime in this public API, matey.
setCallbacks still ends up storing a raw pointer internally, so a callback object that goes out of scope will leave m_pCallbacks dangling. A short @details here saying the handler must outlive NimBLEDevice (or until resetCallbacks() be called) would make this breaking change far harder to misuse.

Arr, this setter still stores a raw pointer under the hood, so a callback object with shorter lifetime than the client will turn into a dangling target later. I’d document that rule on the header/Doxygen surface so users don’t miss it during the breaking migration.

Arrr, reset callbacks after every successful deinit.
deinit(false) leaves m_pCallbacks unchanged. init() re-registers the store-status lambda but does not reset m_pCallbacks. After the handler is destroyed, a later store-status event can therefore call through its dangling pointer.
