Observability: Enhancing monitoring features V2 #1005

Is your feature request related to a problem?
Kaapi already sends traces, metrics, logs and errors to Sentry, but there are still gaps: some flows aren't traced end to end, alerts are noisy or hard to triage, and the telemetry naming isn't consistent across modules.

Describe the solution you'd like

• Fill the remaining monitoring gaps (traces, metrics, alerts, release tagging).
• Fix the existing observability issues so alerts are actionable and the data is easy to filter.
• Track each piece as a sub-issue under this one.
